Barbecue 101
If you are not from around here, then you might not know about barbecue. Pork barbecue is sliced, pulled, minced and slathered. Bon Appetit magazine described North Carolina barbecue as:
"A 'dry rub' of brown sugar, pepper, paprika and salt flavors the meat before it is cooked, and a vinegary 'mop' is brushed onto the pork to add more taste as it is smoked. Once cooked, the meat is 'pulled,' that is, shredded into slivers that are just the right size for piling onto a bun. The sandwich -- drizzled with a bit of the vinegary sauce, which cuts the richness of the meat -- is the ultimate in Carolina barbecue."
There are 3 types of barbecue.
Western Carolina Barbecue is ketchup-based and reddish-brown in color. Special ingredients usually includes brown sugar, lemon juice, butter or margarine, minced onions, hot pepper sauce and Worchester sauce.
Lexington Barbecue. Considered a form of Western Carolina by some, is ketchup-based and reddish in color. Ingredients usually includes cider vinegar, salt, ground red pepper, red pepper flakes and sugar.
Eastern Barbecue does not include ketchup. Instead , sauce the is clear. Ingredients usually includes cider vinegar, salt, cayenne pepper, red pepper flakes and brown sugar.
Lesson 1 About the South: Sweet Tea
The recipe is simple.
2 quarts water
2 family size tea bags
1 cup of sugar
4 teaspoons freshly squeezed lemon juice
2 thin sliced lemons
Boil 1 quart water, add tea and steep for five minutes. Mix in the sugar and 1 quart cold water. Add ice and enjoy!!!!!
